What is a coffee tamper?
If you have just bought an espresso machine, the tamper is the small object you were not expecting to have opinions about. This article covers what it does, the parts that differ between models, and the boundary of what it can fix.
Why coffee needs compressing at all
Espresso is made by forcing water through ground coffee at around nine bars of pressure. Loose grounds at that pressure behave like sand under a hose: the water shoves them aside and pours through the gap it has made. What comes out is pale, quick and sour, because most of the coffee has barely been touched.
Compressing the grounds into a solid bed removes that option. Water meets uniform resistance across the whole surface and has to travel through the coffee rather than around it. That is the entire purpose of the tool, and it explains why a tamper is essential for espresso and irrelevant for a cafetière or a filter cone, where water passes through at little more than the pressure of its own weight.

Of those, the diameter is the only one that can make a tamper unusable. Everything else is a matter of preference or of how much guesswork you want to remove.
Size is the part that matters
A tamper has to match the inside diameter of your basket, not the outside of your portafilter. Get it wrong by two millimeters in the small direction and you leave a ring of uncompressed coffee all the way around the bed, which is precisely the easy route the tamper exists to eliminate. Get it wrong in the large direction and it simply will not go in.
Three sizes cover almost every home machine: 51mm for Delonghi and most compact models, 53 to 54mm for Breville and Sage, and 58mm for full-size machines. Measuring takes a ruler and about a minute, and the method is in the size guide.
Flat, convex, or grooved
Most tampers have a flat base, which compresses the bed uniformly and is the sensible default. Convex bases curve slightly downward at the center, on the theory that this pushes coffee outward toward the basket wall where channelling tends to start. Grooved or ripple bases are machined with fine concentric rings, which break the suction that can pull grounds upward as the tamper is lifted away from a damp bed.

Calibrated versus plain
A plain tamper is a base and a handle. How hard it presses is entirely up to you, every single morning, which means the one step you cannot see is also the one moving most between shots.
A calibrated tamper adds a spring that compresses to a set load and then gives way, so the bed receives the same force on every shot regardless of how awake you are. It hands the hardest part of the technique to a mechanism, which is why it pays off fastest for anyone still building muscle memory and keeps paying once it is built. Do you need one if your machine came with a tamper?
Most espresso machines ship with something that presses coffee. On Breville and Sage machines it clips magnetically to the side; on others it is a plastic disc in the accessory box. They work, in the sense that they compress the bed.
Two things tend to make people replace them. The first is size: bundled tampers are frequently a millimeter or two narrower than the basket, which leaves an untamped ring at the edge. That ring is exactly the loose path this whole article is about, so the tool intended to prevent channelling can create it. Measuring settles it in a minute.
The second is weight. A light plastic tamper transmits every wobble in your wrist, and gives you no feedback about how hard you are pressing. A heavier tamper is steadier simply because it has mass, and a calibrated one removes the question entirely by stopping at a fixed load.
Start by measuring the one you have against your basket. It takes a ruler and a minute, and an undersized tamper is the most likely culprit behind shots that vary. If it comes up short, that millimeter or two is what has been costing you.
What to sort out alongside it
The tamp is one link in a short chain, and these are the others.
The grind has to suit your basket. Resistance in espresso comes mostly from particle size, and if the shot pours in twelve seconds no amount of pressing will hold it back. It cannot level a bed for you: if the grounds land in a mound, a tamper compresses the mound. And it cannot compensate for a wildly inconsistent dose, because the depth of the bed changes how everything above it sits.
Level the grounds, get the grind roughly right, keep the dose steady. Then the tamper does its one job, which is to make the bed the same every time so that the adjustments you make to everything else actually mean something. The step-by-step is in how to tamp espresso.
